Strawberry Guava Sorbetto

180g 6.3ozPreGel Fruttosa® (Water & Milk Base)
550g 19.4ozsugar
100g3.5oz Pregel Dextrose
100g 3.5ozPregel Pink Guava Fortefrutto®
10g 0.35ozPreGel Velluntina® (Sorbitol Paste)

Strawberry Guava SorbettoDirections:

  1. Place all the ingredients into a large mixing container.
  2. Mix with an immersion blender for 3–4 minutes making sure everything is dissolved.
  3. Place in the heat treatment portion of the batch freezer and process according to the machine.
  4. Extract the gelato into a pan.
  5. Garnish with fresh strawberries and guavas.
