Recipe: Classic “Shirley Temple” Sorbetto

20g0.7ozlemon juice
442g15.6ozsugar
90g3.2ozPreGel Dextrose
20g0.7ozPreGel Vellutina®
140g4.9ozPreGel Fruttosa®

DIRECTIONS

  1. With an immersion blender, combine the liquid ingredients while slowly adding the dry ingredients.
  2. Mix well for 2-3 minutes.
  3. Place in Hot Process machine and follow the machine instructions.
  4. Allow the base to age overnight.
  5. Process in a batch freezer according to manufacturer’s directions.
