White Chocolate Snowballs

200g 7ozheavy cream
600g 21.1ozsugar
60g 2.1ozdextrose
135g 5ozPreGel Diamant 50
120g 4.2ozPreGel White Chocolate Traditional Paste
200g 7ozPreGel Coconut Traditional Paste
As desiredCoconut Flakes

White Chocolate Snowballs

 

Directions:

  1. Add all the ingredients together.
  2. Mix carefully with an immersion blender.
  3. Put into the pasteurizer.
  4. Pasteurize at 85°C/185°F.
  5. Pour mix into the batch freezer.
  6. Sprinkle coconut flakes on the top and/or fold in while you are extracting. Also try decorating with Ferrero® Garden Coconut confections.
