Coffee Sundae

Coffee Gelato Ingredients

3000g95.2ozwhole milk
150g5.3ozheavy cream
60g2.1ozPreGel Dextrose
150g5.3ozPreGel Nonfat Dry Milk
150g5.3ozPreGel Diamont 50 (Milk Base)
200g8.8oz5-Star Chef Pastry Select Coffee Compound or PreGel Coffee Costa d Oro Traditional Paste (Espresso)

Coffee Sundae
Method of Preparation:

  1. Mix all ingredients together.
  2. Blend with immersion blender.
  3. Pasteurize the mix at 85°C/185°F.
  4. Mix well for 2–3 minutes
  5. Pour in batch freezer and freeze.


  1. Freeze desired glass. Drizzle in PreGel Mou Topping
    (Creamy Caramel).
  2. Fill glass with two scoops coffee gelato.
  3. Garnish glass with whipped cream, chocolate-
    covered coffee beans and coffee flakes. Add
    cookies or biscotti as desired.
