230g 8ozheavy cream
140g 5ozskim milk powder
580g 20ozsugar
60g 2ozPreGel Dextrose
140g 5oz PreaGel Diamant 50 (Milk Base)
185g 6.5ozPreGel Vanilla Velvet Traditional Paste
185g6.5ozPreGel Banana Fortefrutto®
As desiredPreGel Caramel Topping

Directions:

  1. Mix the sugar, PreGel Dextrose and PreGel Diamant 50 (Milk Base) together.
  2. Add whole milk, cream and skim milk powder.
  3. Add the PreGel Banana Fortefrutto® and fresh bananas.
  4. Mix carefully with an immersion blender.
  5. Put into the pasteurizer.
  6. Pasteurize at 85°C/185°F.
  7. Pour mix into the batch freezer.
  8. Decorate with PreGel Caramel Topping.
