Method of Preparation

  1. Combine milk, sugar, salt, butter and 5-Star Chef Pastry Select Cinnamon Compound; bring to a boil.
  2. Stir in sifted flour ; remove from heat and mix well.
  3. Transfer to bowl with paddle attachment; mix on medium speed to cool to 40°C/104°F.
  4. Pipe into fryer; cook until done.
  5. Remove from fryer; toss in cinnamon sugar mixture and serve warm.
  6. Serve with PreGel Pino Pinguino® Chocolate Arabeschi®.

Note: you may replace 5-Star Chef Pastry Select Cinnamon Compound with PreGel Cinnamon Traditional Paste. Also, any PreGel Arabeschi® can be used for dipping.
