Caramel Popcorn Soft Serve

Cold Process

3500g123ozwhole milk
300g10.6ozsugar
50g1.8ozPreGel Nonfat Dry Milk Powder
500g17.6ozcaramel popcorn
180g6.35ozPreGel Fruttosa® (Milk & Water Based - KSA Dairy - Hot/Cold Process)

Directions

  1. Place the milk in a large mixing container.
  2. Whisk together the sugar, milk powder and PreGel Fruttosa® to remove any lumps.
  3. With an immersion blender, mix the milk while slowly adding the dry ingredients.
  4. Mix well for 2-3 minutes.
  5. Add the caramel popcorn and blend with an immersion blender until there are no large pieces of popcorn remaining.
  6. Allow mix to infuse overnight, then strain.
  7. Process in soft serve machine according to the machine instructions.
