200g7.1oz5-Star Chef Pastry Select
600g21.2ozheavy cream

White Russian Pannacotta MartiniMethod of Preparation

  1. In a pot, heat the milk and the 5-Star Chef Pastry Select Coffee Compound to 40°C/104°F.
  2. Remove from heat; whisk in 5-Star Chef Pastry Select Pronto Pannacotta (Cooked Cream) powder ; whisk in heavy cream.

Assembly

  1. Pipe a small amount of 5-Star Chef Pastry Select Coffee Crisp Filling in the bottom of a martini glass.
  2. Freeze the filling in the glass before proceeding.
  3. Pour the coffee pannacotta on top of the frozen filling.
  4. Put the martini glasses in the refrigerator to set.
  5. Allow the product to set for at least 2 hours before serving.
  6. Just before service, pour a shot of Kahlua on top of the set Pannacotta.
  7. Garnish as desired and serve.

*Note:You may replace 5-Star Chef Pastry Select Coffee Compound with PreGel Coffee Costa d’Oro Traditional Paste (Espresso).
