
560g (19.8oz) PreGel Five Star Chef Éclair Mix – 312098
820g (28.9oz) warm water (55°-60°C/131°-140°F)
METHOD OF PREPARATION
- Combine warm water and PreGel Five Star Chef Éclair Mix
in the bowl of a stand mixer fitted with the paddle attachment. - Mix on medium speed for 10 minutes.
- Allow the dough to rest for 5-10 minutes.
- Heat oil to 350°F/180°C.
- Pipe batter with a small round piping tip randomly into oil.
- Let fry 3-5 minutes, turning often to make sure that the color is even.
- Toss in desired sugar directly after removing funnel cake from the oil.
Serve topped with powdered sugar and any PreGel Topping selection from the PreGel Toppings, Glazes & Coatings line.
